1 egg

300 mil milk, soy or almond milk

150 ml organic non bleached spelt flower (or for a more solid version use buck wheat flower )

1/2 tea spoon salt

1 teaspoons of honey

1 table spoon coconut oil

1.Sift flour into a bowl and add the salt

2.Whisk milk and egg together, add oil and honey then add to dry ingredients, whisking until smooth.

3.Cook until golden in coconut oil.

4.Top with Lingonberry jam and coconut yogurt


Rårörd Lingonsylt "Raw stirred Lingonberry Jam"

100 ml Lingon, fresh or thawed

2 table spoons of honey

Stir and lightly crush the berries into a bowl with the honey and let sit for 15 min.

Lingonberries are tangy and sweet, they grow wild in the forests of Sweden, but if you are lucky you can sometimes find them frozen in Australia.
