Rosendal's Garden is an open garden, with the main purpose of presenting biodynamic (organic) garden cultivation to the general public. It is situated on Djugarden in central Stockholm and has a long and rich history. In 1848, Swedish king Oscar I built the orangery that is still here today. Raspberries are really best eaten strait of the bush but sometimes there are a few left for this exquisite tart. This is a recepie of their delicious Rasberry Tart

Rosendals Tradgards cafe' Hallon Paj (Raspberry Tart)

150 g butter
1 cup of flour
3 table spoons of icing sugar
2 table spoon of water
4 egg yolk
1/2 cup full cream
4 table spoons suger
1 table spoon vanilla suger
1 1/2 cup of raspberries
Mix the ingredients to the crust and let it sit for one hour. Pre cook the crust in 200 C
Wip the egg yolks and the cream in tow separate bowls, add sugar and vanilla sugar ( or vanilla essence ) to the cream and then mix it with the egg yolk
Pour the filling into the crust ( that has slightly cooled down) Spread the raspberries on top
Cook in the oven at 180 for 15 min until the cream has thickened
